Just because you’re not a Chef doesn’t mean you can’t Make it at Home! Chef Alison shares her recipe for the perfect summer pasta!

Culinary Concept Chef, Brio Tuscan Grille




3 tablespoons extra virgin olive oil
4 pints grape tomatoes
Kosher salt and freshly cracked black pepper
1 pound pasta
4 ounces buffalo mozzarella, torn
12 leaves Fresh Basil, torn, divided
Extra Virgin Olive Oil
Salt and Pepper to taste


Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Drizzle the olive oil over the grape tomatoes, season with salt and pepper and toss to coat. Place the tomatoes on the baking sheet and cook until skins turn a rich golden brown, about 10 minutes. Cook pasta according to package directions. Reserve ½ cup of pasta water. Drain and return to pot. Add roasted tomatoes, mozzarella, 8 basil leaves, and extra virgin olive oil. Stir, adding pasta water as necessary to make a light sauce. Season with salt and pepper. Divide on to 4 serving plates. Garnish with a little more basil. Serve
